Sounds fabulous Sally - the mashed cauliflower reminds me of a friend who is on the high protein diet. They eat that instead of potatoes. Cheryl

No, I don't do fast food, unless I'm traveling and just have to. Even on days when I run errands and will be out all day, I pack a lunch.

I made a salad of boson lettuce, carrots, cucumbers, tomatoes, scallions, mushrooms, and sliced hard boiled eggs, and roasted beets on top. We grilled some steak and threw on a handful of nice local aged blue cheese...and voila! we heated up some garlic nan...it was divine.

What great dinners you all had. Good ideas......for my top 10 list.

Anybody out there eat fast food for dinner? You can confess it here. We are not food cops....at least I'm not and I'm willing to encourage others to be the same. Who wants people to comment negatively on what they're eating - n o b o d y!

And if you eat fast food regularly, I'm hoping that you'll get simple ideas for incorporating more healthy fare into your daily options. Cheryl

We had turkey "burgers" - low-fat ground turkey seasoned with sauteed red onions and cumin. They are served in a pita pocket and dressed with yogurt sauce. The yogurt sauce was made with fat-free plain yougurt, a little red wine viegar, dill, diced fresh tomatoes, sliced red onions, cucumber slices and dill. Very light and healthy and yummy too! Fruit salad on the side.

We put a spicy rub on some chicken breasts and baked them in the oven. Enjoyed some steamed broccoli and fava beans on the side. Pretty healthy start to the month of May.

I received a direct reply from a subscriber, Clarence, and it was so neato I'm pasting it below:

I have access to real raw milk and I have some of my own garden's tomatoes in the freezer, so I had tomato soup.
recipe:

Cut up an onion and saute until transparent Puree some (I'm male, "some" is a measurement) frozen tomatoes (peel first in hot water to remove skins) Add some milk, the onions, basil, thyme and a bit of sugar to take the acidity out of the tomatoes.

Heat n eat.

Your newsletter is lovely, lively and I like you.
