Yay Vicki - you were finally able to post :)

I make a smoothie much like this. You're right on - an acquired taste, delicious, packs in the nutrients. I often add almond milk too for extra nutrients and protein.

My stretching instructor gave us a great smoothie which really packs the greens in.
Take one cup of packed greens, any leafy greens, a cup of water, then fruit, any kind that you want. I add flax seed oil and a scoop of soy or protein powder if you want. Mix in a blender. It is an unusual green color and may be an acquired taste but very filling and quite delicious.
I usually do half of this for lunch.

I should do an interview with you about how you "reuse" these in interesting leftovers that don't make you feel like you're eating the same thing day after day. Interested?

It's because I cook in big batches. If I am goning to bake potatoes, I bake 5 lbs, If I am going to eat chicken I buy the biggest local one I can find, etc. Then I have leftovers to have for lunch and build a mean around. It helps me eat healthy on those nights I am tired and don't feel like cooking.

Deena - great idea to put roasted veggies on sandwiches. You're so good about finding ways to eat leftovers.

I LOVE my veggies! There are very few I don't like-green peppers and radishes...I love to roast them It carmelizes the sugars and makes any veg taste great. All you do is toss chopped veggies in a little olive oil, spread in a shallow pan, sprinkle with salt and pepper. Roast at 400 until tender and browned. Leftovers are good in salads, tacos, sandwiches...
